In the 1950's some people were referred to as a square.
It was used to describe someone who is dull and out of touch with current trends. It was appropriate since they were going to a 1950's restaurant.

To get technical, the shape that Mia formed was not a square. It was a rectangle

Mia made a rectangle because she's supposed to be unpredictable.

It's slang originated by jazz musicians, from shape of a conductor's hand gestures in a regular four-beat rhythm.

To be more technical She formed an "L" "7" which translates to a "square" like you guys said but the proper term is "L7".

I think she made a rectangle because it was supposed to be a joke. A lame joke...but, still a joke.

The making of a graphic over the area her fingers made was invocative of the french new wave movies that Tarentino was heavily inspired by (which is displayed more in the Jack Rabbit Slim sequence then anywhere else).
